walnut-stuffed dates

Healthy vegan snacks

In Blog, Food prep by MurielLeave a Comment

The snack situation on a vegan diet typically needs a little more planning than otherwise, since a lot of stores don’t have vegan convenience foods besides expensive nut mixes. Homemade snacks are your best bet, and the healthiest too, since even vegan store-bought snacks often have funky ingredients and E-numbers like flavourants, preservatives and emulsifiers – not all bad, but whole foods of the recognisable type are generally better.

When we’re feeling peckish, it’s better to reach for foods that will not only satisfy the short-term craving but will also keep our blood sugar stable and sustain us until we’ve got a proper meal in front of us. Typically, this means high-fibre foods that are minimally processed. If it doesn’t come in packaging and has no ingredients, it’s probably a whole food!

Here are some ideas to get you started:

Medjool dates stuffed with walnuts (or nut butter)

Besides being absolutely delicious, dates are a rich source of fibre, antioxidants, natural sugars and potassium. Stuff them with walnuts (the healthiest nut there is) or with homemade nut butter.

Kale chips

Way healthier than potato chips, and just as moreish. Make them at home for an inexpensive, waste-free snack – here’s my recipe.

Hummus with seed crackers

Both can be either homemade or storebought. Hummus is a great way to pack in some of your daily servings of beans, and seed crackers are chock-full of omega-3 fatty acids.

Yoghurt with granola and fresh berries

Try my homemade soy yoghurt, and enjoy it with homemade or storebought granola, and fresh berries for a dose of antioxidants.

Popcorn with nooch and paprika

Try it once, you’ll never go back to microwave popcorn. Pop your popcorn the old-school way, spray on a bit of olive oil, and sprinkle on some salt, nutritional yeast and smoked paprika. It’s literally the BEST.

Frozen grapes

This is a throwback to hot summer days after school. I’d pop a punnet of grapes in the freezer the night before, and the next day they’d be deliciously cold and sweet, the perfect study snack.

Tortilla chips with salsa and guac

So good. Buy some good quality tortilla chips, and make (or buy) some salsa and guacamole to dip them in.

Roasted chickpeas

Rinse a can of chickpeas (save the aquafaba), dry them thoroughly between kitchen paper, and roast them in the oven with some olive oil, paprika and cumin – add the salt after they’ve crisped up.

Feeling peckish yet? 😋
