My name is Muriel. For the last nine years, I've been actively involved in supporting and guiding people in their transition to a plant-based diet, first through a student society that I co-founded during my studies (which later became a registered non-profit) then with ProVeg International.

I have a long-time interest in good food, healthy habits, environmental sustainability and animal welfare, and I'm proud to promote eating habits that are consistent with a vision of a sustainable and equitable world.

I love to meet people where they're at on their journey, equipping them with knowledge and skills they need to eat more plants. Whether it's kitchen tricks, nutritions basics or how to overcome social hurdles, I'm there. With many hours in the kitchen under my belt, I'm usually quite proud to say, "Anything you can make, I can make vegan!"

Programme outline

Week 1: Rethinking your food plate

Most of us have been taught to think of our food plate in terms of some variation on 'meat and two veg'. The plant-based food plate looks very different though, and we'll rethink how we fill our plate of food, using the latest nutritional knowledge.

Week 2: Stocking your pantry

As we rethink our plate, we'll be rethinking our pantry, too. Shopping becomes a whole new adventure as we look out for ingredients that we might never have tried before. We'll structure our grocery list into useful categories, then head to the shops!

Week 3: Adapting your favourites

Possibly the hardest thing about shifting towards a plant-based diet is giving up the foods we love. But not to fear, you won't just be eating carrots and hummus! Nowadays, it's pretty easy to recreate familiar flavours and textures, and we'll learn some tricks to 'veganise' your favourite foods.

Week 4: Discovering new foods

Now that we've set some good foundations with nutrition basics, a well-stocked pantry and the comfort of your favourite foods, we'll head into the exciting territory of new and unfamiliar foods, and challenge ourselves to try a few new ingredients and recipes.

Week 5: Setting your personal goals

What is your personal motivation for this shift? Do you have health goals? Do you want to reduce your environmental impact? Or do you want to diversify your culinary skills? We all have different interests and motivations, and we'll bring them to the table and set our personal goals to guide the rest of our Plantiful journey.

Week 6: Creating a new routine

If we want these new Plantiful habits to stick, it'll help to create our own routines. Using everything we've learnt so far and our personal goals as a guide, we'll spend the final week putting our new routine into action, and reflecting on the journey so that we feel empowered to continue with our new habits.
